Hot Weather Notice: If you have received an online order, please check that the temperature of the contents of your box, upon arrival, is below 5°c.

REFRIGERATION

These products should be refrigerated immediately and kept below 5°c.

All our food should be used by the use by date shown on delivery information, or if purchased in the shop within 5 days of purchase.

FREEZING

All our products are made fresh.  Steak pies, Steak and Kidney pies, fruit pies, mash & Liquor can be frozen if required for up to 3 months.

Vegan pies cannot be frozen.

We do not recommend freezing eels.

We recommend that frozen products should be defrosted in a refrigerator overnight and reheated when they are thoroughly thawed.

 

RE-HEATING

OVEN METHOD

We recommend that you place the pies on a clean baking tray, crispy tops up. Sprinkle a little drinking water over the top of the pies and place in a pre-heated oven at a medium temperature for 15-20 minutes. The core temperature must reach over 75° c for at least 2 minutes. This should be checked using a thermo probe.

 

MICROWAVE METHOD

Place the pies on a clean non-metallic and ovenproof plate. Heat for approximately 3 minutes on full power. The core temperature of the pies must reach 75°c for at least 2 minutes. This should be checked using a thermo probe.

For best results, whilst the pies are heating, turn the grill on high. When the core temperature has been reached in the microwave, splash a little drinking water over the top of the pies and place it under the grill for 1-2 minutes to crisp up the tops.

Please note that re-heating times are approximate as ovens vary and you may need to adjust the cooking times accordingly.

 

RE-HEATING THE LIQUOR

If you have frozen the liquor, please allow it to thaw naturally first.   You will find that the liquor will separate once defrosted and will be jelly-like if chilled but can easily be brought back together by following these instructions:   We recommend heating gently, either on the hob or in the microwave,  and periodically whisking with a balloon whisk.   If it is necessary to thin the liquor, then add a little boiling water, reheat fully, and whisk again.   You may wish to add a little extra salt to taste.

RE-HEATING STEWED EEL

Stewed Eels may be gently reheated on the hob until thoroughly warmed through.  Gently stir taking care not to break the pieces of fish.
